Pumpkin Competition 2021
Caerphilly residents are being encouraged to recycle their pumpkins this Halloween via a fun and light-hearted competition.

Every pumpkin left on top of the food caddy between November 1st and November 12th will be entered into a prize draw where 10 lucky residents could be in with a chance to win a £50 Love to Shop Voucher. 

All you need to do is photograph your pumpkin on top of your food caddy and email the image to recyclingwards@caerphilly.gov.uk along with your name, address and contact number.

Please note that pumpkin is rich in vital vitamins and minerals so once your pumpkin is hollowed out, the flesh of a pumpkin can be used to make a delicious soup, pumpkin pie and much more. Pumpkin also makes a great alternative to sweet potato. Pumpkin seeds can be toasted and make a tasty, healthy addition to soups, pasta and salad.  

A quick and easy Pumpkin Muffin Recipe

Ingredients: 
225g plain flour
2 tsp baking powder
1 tbsp ground cinnamon (or 2 tsp pumpkin spice)
100g caster sugar
50g soft light brown sugar
200g pumpkin purée (from a can or homemade)
2 large eggs
125g slightly salted butter, melted

Method: 
Step 1: Heat the oven to 200C/180C fan/gas 6. Line a 12-hole muffin tin with muffin cases. Mix the flour, baking powder, cinnamon and both sugars together in a large bowl. Break up any lumps of brown sugar by rubbing them between your fingers.

Step 2: Whisk the purée and eggs together in a jug, then add to the dry ingredients with the melted butter. Whisk for 1-2 minutes with an electric hand whisk until just combined.

Step 3: Bake for 15 minutes until golden and risen and a skewer inserted comes out clean. Lift onto a wire rack to cool completely. Will keep for three days in an airtight container.

Even with the easing of restrictions, I would still encourage people to be mindful when mingling and interacting with friends and family during this year’s Halloween festivities. I’d encourage residents to give recipes using pumpkins a go to avoid food waste, and to take full advantage of this competition by recycling your carved pumpkins.”
